  • 1 cup granulated sugar
  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups diced apples
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the melted butter, egg, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. In a separate bowl, mix together the brown sugar, flour, softened butter, and cinnamon for the streusel topping.
  7. Fill the muffin cups about two-thirds full with the muffin batter.
  8. Spoon the streusel topping over each muffin.
  9. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cool before serving.

Notes

  • For extra flavor, add a pinch of nutmeg to the batter.
  • Best served warm with butter.
