- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 3/4 cup whole milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, mix together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar.
- In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples.
- Divide the batter among the prepared muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before removing from the pan.
