Apple Fritter Muffins

These Apple Fritter Muffins are the perfect combination of soft, fluffy muffin and sweet, spiced apple fritter. They are easy to make and utterly irresistible!

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, mix together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar.
  3. In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. Divide the batter among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before removing from the pan.

Notes

  • Try adding a sprinkle of coarse sugar on top before baking for added sweetness and texture.
  • These muffins are best served warm.
