  • 2 stalks celery, diced
  • 1 cup wild rice
  • 6 cups vegetable broth
  • 1 cup cooked turkey bacon, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup kale, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add carrots and celery, cooking until they begin to soften.
  3. Stir in the wild rice, broth, turkey bacon, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 45 minutes, or until rice is tender.
  5. Add kale and cook for an additional 5 minutes.
