Baked Potato Soup

Baked Potato Soup is a creamy, rich, and hearty dish that perfectly combines the flavors of baked potatoes and turkey bacon.

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 400°F (200°C). Bake potatoes until tender, about 1 hour.
  2. Allow potatoes to cool, then peel and dice them.
  3. In a pot, cook the turkey bacon until crispy, then remove and set aside.
  4. Melt butter in the pot and add flour, stirring for 1-2 minutes.
  5. Gradually whisk in chicken broth and milk, cooking until the mixture thickens.
  6. Add the diced potatoes, garlic powder, onion powder, salt, and pepper. Simmer for 10 minutes.
  7. Stir in cheddar cheese, sour cream, and bacon. Heat through.
  8. Serve hot, garnished with green onions.

Notes

  • This soup can be made ahead and stored in the refrigerator.
  • For a vegetarian version, omit turkey bacon and use vegetable broth.
