Banana Pudding Cheesecake

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 cups heavy whipping cream
  • 1 cup banana pudding mix
  • 4 ripe bananas, sliced
  • 1/2 cup whipped cream, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the crushed graham crackers and melted butter. Press into the bottom of a springform pan.
  3. In a mixing bowl, blend cream cheese and sugar until smooth. Add vanilla extract and mix well.
  4. In another bowl, whip heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  5. Mix banana pudding with milk according to package directions and fold this into the cream cheese mixture as well.
  6. Pour the cheesecake mixture over the crust and refrigerate for at least 4 hours or until fully set.
  7. Once set, top with sliced bananas and a dollop of whipped cream before serving.

Notes

  • For a richer flavor, use ripe bananas.
  • Keep the cheesecake refrigerated when not serving to maintain its texture.
