  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cloves garlic
  • 1/4 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 pound pasta of choice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then toss with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet, heat garlic until fragrant, then add roasted squash and vegetable broth.
  5. Blend the mixture until smooth, then return to the skillet.
  6. Stir in heavy cream and Parmesan cheese, cooking until heated through.
  7. Meanwhile, cook the pasta according to package instructions.
  8. Combine the pasta with the butternut squash sauce and serve warm.

Notes

  • For a vegan option, substitute heavy cream with coconut milk and omit the Parmesan.
  • Add crushed red pepper for a bit of heat.
