  • 1 pound Italian sausage
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 12 ounces tortellini
  • 2 cups spinach
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the butternut squash, chicken broth, and thyme.
  4. Bring to a boil, then reduce heat and simmer until squash is tender.
  5. Add the cream and tortellini, cooking until tortellini is done.
