Cardamom Mango Tres Leches Cake

A rich and moist cake infused with cardamom and mango.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon ground cardamom
  • 1 cup coconut milk
  • 1 cup evaporated milk
  • 1 cup sweetened condensed milk
  • 1 ripe mango, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add butter and eggs, mixing until smooth.
  4. Stir in milk and cardamom until well blended.
  5. Pour batter into a greased cake pan and bake for 30-35 minutes.
  6. In a separate bowl, whisk together coconut milk, evaporated milk, and condensed milk.
  7. Once the cake is baked, let it cool, then poke holes in it.
  8. Pour the milk mixture over the cake and let it soak for at least 2 hours.
  9. Top with diced mango before serving.

Notes

  • For extra flavor, add more cardamom to the milk mixture.
  • Serve chilled for the best taste experience.
