Cheesy Asparagus One Pot Orzo

  • 1 cup orzo
  • 2 cups asparagus, chopped
  • 4 cups vegetable broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add the chopped asparagus and cook for a few minutes.
  3. Stir in the orzo and vegetable broth, and season with salt and black pepper.
  4. Bring to a boil, then reduce heat and simmer until the orzo is cooked and most of the liquid is absorbed.
  5. Remove from heat and stir in the grated Parmesan cheese until melted. Serve warm.
