Chicken Cordon Bleu

A delightful twist on the classic chicken cordon bleu, featuring turkey bacon and chicken ham for added flavor.

  • 4 boneless, skinless chicken breasts
  • 8 slices turkey bacon
  • 4 slices chicken ham
  • 1 cup shredded Swiss cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a baking dish with non-stick spray.
  3. Place each chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick.
  4. Spread Dijon mustard on each breast and layer with turkey bacon, chicken ham, and Swiss cheese.
  5. Roll up each breast tightly and secure with toothpicks.
  6. Dredge the chicken rolls in flour, dip in beaten eggs, and coat with breadcrumbs.
  7. Place the rolls in the prepared baking dish and bake for 30-35 minutes or until chicken is cooked through.
  8. Let rest for a few minutes before removing toothpicks and slicing.

  • For additional flavor, consider adding herbs like thyme or basil to the breadcrumb mix.
