  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup chicken broth
  • 2 tablespoons capers
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Flatten the chicken to an even thickness and season with salt and pepper.
  2. Dredge the chicken in flour, shaking off the excess.
  3. In a large skillet, heat olive oil over medium-high heat and add the chicken.
  4. Cook for 3-4 minutes on each side until golden brown and cooked through.
