Chocolate Raspberry Cake

  • 1 cup unsweetened cocoa powder
  • 1 ½ cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until combined.
  4. Stir in boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30 to 35 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  8. Once cooled, assemble layers with whipped cream and raspberries in between.
  9. Frost the top and sides of the cake with chocolate ganache.

Notes

  • For best results, use room temperature ingredients.
  • You can substitute raspberries with other berries if desired.
