  • 2 cups powdered sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 teaspoons vegetable oil

Instructions

  1. In a large bowl, combine powdered sugar, peanut butter, softened butter, and vanilla extract. Mix until smooth.
  2. Shape the mixture into egg shapes and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes.
  3. In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring until smooth.
  4. Dip each frozen egg into the melted chocolate, allowing excess to drip off. Return to the parchment paper.
  5. Let the chocolate set at room temperature, or refrigerate until firm.
