  • 1 cup brown sugar

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup cinnamon sugar for the swirl

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, combine the pumpkin puree, softened butter, brown sugar, and granulated sugar.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the nuts if using.
  7. Pour the batter into the prepared pans, filling them halfway.
  8. Sprinkle cinnamon sugar on top of the batter.
  9. Pour the remaining batter on top and swirl with a knife to create a marbled effect.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Let cool in the pans for 10 minutes before transferring to a rack.
