Classic Spicy Moroccan Fish in Rich Sauce

  • 4 fillets white fish (such as cod or haddock)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup fish stock or water
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Stir in the cumin, smoked paprika, and cayenne, cook for 1 minute.
  4. Add the crushed tomatoes and fish stock, bring to a simmer.
  5. Carefully place the fish fillets in the sauce, cover and cook for 10-15 minutes until fish is cooked through.
  6. Stir in chopped bell pepper and parsley, cook for an additional 2-3 minutes.
