  • 1 cup jasmine rice
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 2 cups green beans, trimmed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken thighs and cook until browned, about 5 minutes per side.
  2. Add garlic and ginger, sautéing for an additional minute.
  3. Pour in the coconut milk and chicken broth, bringing to a simmer.
  4. Stir in the jasmine rice and green beans, cover, and reduce heat to low. Cook for 20 minutes or until the rice is tender.
  5. Fluff the rice with a fork, then serve warm.
