Coconut Chicken Rice Bowl

A delicious and comforting dish that combines tender chicken and flavorful rice cooked in coconut milk.

  • 2 cups jasmine rice
  • 1 pound boneless chicken thighs
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, heat the vegetable oil over medium heat and add the chicken thighs. Cook until golden brown on both sides.
  3. Add the rinsed rice to the pot, followed by the coconut milk, chicken broth, soy sauce, garlic powder, and ginger powder.
  4. Stir to combine and season with salt and pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is cooked and the chicken is tender.
  6. Fluff the rice with a fork and serve hot, garnished with fresh cilantro.
