Coffee Cake Muffins

These coffee cake muffins are a delicious and easy treat, perfect for breakfast or a sweet snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the sour cream, melted butter, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a separate bowl, combine the brown sugar and cinnamon for the topping.
  6. Spoon half of the muffin batter into the prepared muffin cups, then add a layer of the cinnamon sugar mixture, followed by the remaining batter on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before serving.

Notes

  • For extra flavor, add chopped nuts or fruits to the batter.
