  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped

  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until soft.
  2. Add garlic and thyme, cooking for another minute.
  3. Stir in chicken broth and bring to a boil.
  4. Add the chicken breast and simmer until cooked through, about 20 minutes.
