  • 1 pound chicken breast, diced
  • 1 cup wild rice
  • 8 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions, carrots, and celery until softened.
  2. Add garlic and mushrooms, cooking until the mushrooms are tender.
  3. Stir in the diced chicken and cook until no longer pink.
  4. Add wild rice and chicken broth, then bring to a boil.
  5. Reduce heat, cover, and simmer for about 45 minutes or until the rice is cooked.
  6. Stir in heavy cream, thyme, salt, and pepper just before serving.

Notes

  • For a thicker soup, let it simmer longer before adding the cream.
  • Feel free to add more vegetables such as spinach or peas.
