  • 2 cups shredded cooked chicken
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup cilantro, chopped

Instructions

  1. In a large pot over medium heat, sauté onions and garlic until translucent.
  2. Add the shredded chicken, enchilada sauce, black beans, corn, chicken broth, heavy cream, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Stir in the cheddar cheese until melted.
  5. Garnish with cilantro before serving.

Notes

  • For extra flavor, you can add diced jalapeños for a spicy kick.
