  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon taco seasoning
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until onions are translucent.
  2. Add in the chicken, black beans, corn, diced tomatoes, chicken broth, and taco seasoning. Bring to a boil.
  3. Reduce heat and let simmer for 15 minutes.
  4. Stir in the heavy cream and cheese until melted and creamy.
