Creamy Chicken Pot Pie

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 pie crust

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onions, carrots, and celery, cooking until softened.
  4. Stir in turkey bacon and cook until crispy.
  5. Add flour, stirring for a minute to combine.
  6. Pour in chicken broth and cream, cooking until thickened.
  7. Mix in chicken, peas, potatoes, garlic powder, salt, pepper, and thyme.
  8. Transfer mixture to a pie crust in a pie dish.
  9. Top with another crust, sealing edges and cutting slits for steam.
  10. Bake for 30-35 minutes until golden brown.
  11. Let cool for a few minutes before serving.

Notes

  • For a flaky crust, chill the pie crust before using.
  • You can substitute vegetables based on your preference.
