- 4 pieces boneless chicken breasts
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup heavy cream
- 2 tablespoons capers
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
- Flatten chicken breasts for even cooking.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
- Cook chicken until golden brown, about 5-7 minutes per side. Remove from skillet.
- In the same skillet, add chicken broth, lemon juice, and capers; bring to a boil.
- Reduce heat and stir in heavy cream and remaining butter.
- Add chicken back to the skillet and simmer for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a brighter flavor, add more lemon juice to the sauce.
