Ingredients

  • 8 ounces turkey bacon
  • 1 pound cremini mushrooms, sliced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crisp. Remove and set aside.
  2. In the same pot, add olive oil, onions, and garlic. Sauté until onions are translucent.
  3. Add the sliced mushrooms and thyme, cooking until the mushrooms are tender.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Chop the bacon and add it back into the soup. Simmer for an additional 5 minutes.
  7. Serve hot, garnished with fresh herbs if desired.

  • For a vegetarian version, substitute turkey bacon with smoked paprika for flavor.
