Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 slices turkey bacon, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Add onions and garlic, cooking until softened.
  4. Add mushrooms and cook until they release their moisture.
  5. Pour in the chicken broth and add thyme, then simmer for 20 minutes.
  6. Stir in heavy cream and season with salt and black pepper.
  7. Blend the soup to your desired level of creaminess.
  8. Serve warm, garnished with additional mushrooms and bacon if desired.

Notes

  • For a vegetarian version, omit bacon and use vegetable broth.
  • Can be stored in the fridge for up to 3 days.
