- 8 ounces rotini pasta
- 1 cup corn, fresh or frozen
- 4 slices turkey bacon
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Cook the rotini pasta according to package instructions. Drain and set aside.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a large bowl, combine the mayonnaise, sour cream, lime juice, and chili powder.
- Add the cooked pasta, corn, turkey bacon, red onion, bell pepper, and cilantro. Mix until everything is well combined.
