A delightful twist on traditional pasta salad featuring creamy dressing, sweet corn, and crispy turkey bacon.

  • 8 ounces rotini pasta
  • 1 cup corn, fresh or frozen
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine the mayonnaise, sour cream, lime juice, and chili powder.
  4. Add the cooked pasta, corn, turkey bacon, red onion, bell pepper, and cilantro. Mix until everything is well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Add more lime juice for extra tanginess.
