  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup zucchini, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the carrots, celery, and garlic to the pot and sauté until soft.
  3. Stir in the potatoes, zucchini, and vegetable broth. Bring to a boil and then simmer until the vegetables are tender.
  4. Stir in the heavy cream and thyme, and cook for another 5 minutes.
  5. Season with salt and pepper, and serve hot, garnished with crumbled bacon.
