- 4 slices turkey bacon
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup zucchini, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tsp garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the carrots, celery, and garlic to the pot and sauté until soft.
