  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1 bell pepper, diced
  • 1 cup heavy cream
  • 1 pack tortilla chips
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the bell pepper, corn, black beans, and diced tomatoes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Stir in cumin and chili powder, cooking for an additional 10 minutes.
  5. Reduce heat and add the heavy cream, stirring until combined.
  6. Serve hot, topped with tortilla chips and cheese, garnished with cilantro.
