Crock Pot Crack Potato Soup

A creamy and comforting potato soup made with turkey bacon.

Ingredients

  • 2 pounds potatoes, peeled and diced
  • 6 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a Crock Pot, combine the diced potatoes, chopped turkey bacon, and onion.
  2. Pour in the chicken broth and season with garlic powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  4. In the last 30 minutes of cooking, stir in the heavy cream.
  5. Use a potato masher to mash some of the potatoes for a thicker consistency.
  6. Serve hot, garnished with additional turkey bacon if desired.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Can be topped with cheese or green onions for extra flavor.
