  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef over medium heat.
  2. Transfer the cooked beef to the crockpot along with onions, garlic, beef broth, potatoes, carrots, celery, paprika, and thyme.
  3. Cook on low for 6-8 hours or on high for 4 hours.
  4. About 30 minutes before serving, stir in the cheddar cheese and milk, and allow to melt.
  5. Season with salt and pepper to taste before serving.
