Crockpot Chicken Noodle Soup

This Crockpot Chicken Noodle Soup is the perfect easy comfort food that warms you up on chilly days.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the egg noodles and stir to combine.
  5. Once the noodles are cooked, shred the chicken with two forks and stir back into the soup.
  6. Serve hot and enjoy!
