Crockpot Chicken Noodle Soup

Ingredients

  • 1 pound chicken breasts
  • 6 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Add the chicken breasts, broth, carrots, celery, onion, garlic, thyme, salt, and pepper to the crockpot.
  2. Cook on low for 6-8 hours or on high for 4 hours.
  3. Remove chicken, shred, and return to the soup.
  4. Add egg noodles and cook on high for an additional 30 minutes.
  5. Stir in the parsley before serving.
