Crockpot Creamy Chicken Taco Soup Recipe

A delicious and easy recipe for creamy chicken taco soup made in your crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Place chicken in the bottom of the crockpot.
  2. Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. About 30 minutes before serving, shred the chicken and stir in cream cheese.
  5. Before serving, stir in shredded cheddar cheese until melted.

Notes

  • Add chopped cilantro for garnish.
  • Serve with tortilla chips for extra crunch.
