Crockpot Vegetable Soup With Chicken Meatballs

A warm and hearty crockpot vegetable soup filled with chicken meatballs, perfect for cold days.

Ingredients

  • 1 pound ground chicken
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 2 cups diced potatoes
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables (frozen or fresh)

Instructions

  1. In a bowl, mix ground chicken with spices and form into small meatballs.
  2. In the crockpot, add all the chopped vegetables and broth.
  3. Place the chicken meatballs on top of the vegetables.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Stir and serve warm with bread.
