Decadent No Bake Pineapple Cake That’s Creamy and Irresistible

This Decadent No Bake Pineapple Cake is a deliciously creamy dessert that requires no baking, making it perfect for hot days.

Ingredients

  • 1 1/2 cups crushed pineapple, drained
  • 1 package cream cheese (8 oz), softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 package graham crackers
  • 1/2 cup shredded coconut (optional)

Instructions

  1. In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
  2. In another bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Fold in the crushed pineapple and coconut if using.
  5. Layer graham crackers at the bottom of your dish.
  6. Spread half of the pineapple mixture over the crackers.
  7. Add another layer of graham crackers and then the remaining pineapple mixture.
  8. Top with more graham crackers and refrigerate for at least 4 hours or overnight.
  9. Slice and serve chilled.

Notes

  • This cake can be made a day in advance for better flavor.
  • Feel free to add nuts for extra crunch.
