  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 cup diced onions
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a pan and sauté onions until translucent.
  3. In a bowl, mix shredded chicken, sautéed onions, and half of the enchilada sauce.
  4. Soften tortillas in the microwave or on the stove.
  5. Spoon chicken mixture into each tortilla and roll them up.
  6. Place rolled tortillas in a baking dish and pour the remaining enchilada sauce on top.
  7. Sprinkle shredded cheese on top and bake for 20 minutes.
