Double Chocolate Muffins

  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt.
  3. In another bowl, mix together the vegetable oil, eggs, vanilla extract, and buttermilk.
  4. Combine the wet and dry ingredients until just mixed. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Feel free to add nuts for extra crunch.
