  • 2 pounds boneless chicken thighs
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced

Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, mix coconut milk, curry paste, soy sauce, honey, onion, garlic, and ginger.
  3. Pour the mixture over the chicken.
  4. Add bell peppers and carrots on top.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Shred the chicken with forks before serving.
