Easy Baked Potato Soup

A rich and creamy potato soup that’s easy to make and packed with turkey bacon for a delightful twist.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until softened.
  3. Add potatoes and chicken broth, then bring to a boil. Reduce heat and simmer until potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in heavy cream, salt, and pepper, then heat through.
  6. Serve topped with turkey bacon, cheddar cheese, and green onions.

Notes

  • You can use regular bacon instead of turkey bacon if preferred.
  • Add extra toppings like sour cream or additional cheese for more flavor.
