Easy Breakfast Potatoes

A delicious and easy recipe for breakfast potatoes paired with turkey bacon to start your morning right.

  • 2 cups diced potatoes
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add the diced potatoes and olive oil. Season with garlic powder, onion powder, salt, and pepper.
  3. Cook the potatoes, stirring occasionally, until golden brown and tender, about 15-20 minutes.
  4. Chop the cooked turkey bacon and add it back to the skillet. Stir in the fresh parsley before serving.

Notes

  • For extra flavor, add some diced bell peppers or onions when cooking the potatoes.
  • This recipe can easily be doubled for a larger group.
