Easy Butternut Squash and Sweet Potato Soup

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Peel and chop the butternut squash and sweet potatoes.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until fragrant.
  3. Add the chopped squash and potatoes to the pot, stirring to combine.
  4. Pour in the vegetable broth and season with cinnamon, nutmeg, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Heat through and adjust seasonings as needed before serving.
