Easy Cheesy Hamburger Potato Soup

A comforting and delicious soup that combines the flavor of hamburgers with the creaminess of cheese and the richness of turkey bacon.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add onion and garlic; sauté until softened.
  4. Stir in potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in milk, cheddar cheese, salt, pepper, and thyme. Cook until cheese is melted and soup is heated through.
  6. Chop the reserved turkey bacon and sprinkle on top before serving.

Notes

  • For a thicker soup, blend a portion of the potatoes.
  • Feel free to add your favorite vegetables.
