- 1 pound ground turkey
- 4 slices turkey bacon
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups diced potatoes
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, add ground turkey and cook until browned.
- Add onion and garlic; sauté until softened.
- Stir in potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in milk, cheddar cheese, salt, pepper, and thyme. Cook until cheese is melted and soup is heated through.
- Chop the reserved turkey bacon and sprinkle on top before serving.
Notes
- For a thicker soup, blend a portion of the potatoes.
- Feel free to add your favorite vegetables.
