  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked rice
  • 2 cups shredded cheese, divided
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together chicken, black beans, corn, salsa, rice, half of the cheese, cumin, and chili powder.
  3. In a skillet, heat olive oil over medium heat and pour in the mixture, stirring until heated through.
  4. Transfer the mixture to a greased baking dish and sprinkle the remaining cheese on top.
  5. Bake for 20-25 minutes or until the cheese is melted and bubbly.
