Easy Chicken Taco Soup

This Easy Chicken Taco Soup is the perfect cozy meal for any weeknight, with rich flavors and a comforting texture.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
  2. Add chicken breasts to the pot, followed by chicken broth, diced tomatoes, black beans, corn, and taco seasoning.
  3. Bring to a boil, then cover and simmer for 20-25 minutes until chicken is cooked through.
  4. Remove chicken, shred it, and return it to the pot. Stir well and serve hot.
