- 1 pound boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
- Add chicken breasts to the pot, followed by chicken broth, diced tomatoes, black beans, corn, and taco seasoning.
