  • 1 cup chopped onion
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil and cook onions until translucent.
  3. Add ground beef, garlic powder, cumin, and chili powder; cook until beef is browned.
  4. Stir in 1 cup of enchilada sauce.
  5. Fill tortillas with the beef mixture, roll, and place in a baking dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20 minutes or until cheese is melted.
