Easy Stuffed Bell Peppers

A delicious and healthy recipe for stuffed bell peppers filled with turkey bacon and veggies.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup quinoa, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds.
  3. In a skillet, cook the turkey bacon until crispy. Add ground turkey and cook until browned.
  4. Stir in quinoa, black beans, corn, cumin, chili powder, and diced tomatoes. Mix well.
  5. Fill each bell pepper with the turkey and veggie mixture.
  6. Top with shredded cheese.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
