- 4 large bell peppers
- 1 pound ground turkey
- 4 slices turkey bacon, chopped
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup diced tomatoes
- 1 cup shredded cheese
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by cutting the tops off and removing the seeds.
- In a skillet, cook the turkey bacon until crispy. Add ground turkey and cook until browned.
- Stir in quinoa, black beans, corn, cumin, chili powder, and diced tomatoes. Mix well.
- Fill each bell pepper with the turkey and veggie mixture.
- Top with shredded cheese.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
