  • 4 bell peppers
  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Add cooked quinoa, tomatoes, garlic powder, onion powder, and chopped turkey bacon to the skillet, stir well.
  6. Stuff the bell peppers with the turkey mixture and place them in a baking dish.
  7. Top with shredded cheese.
  8. Drizzle with olive oil and sprinkle with salt and pepper.
  9. Bake for 25-30 minutes, until peppers are tender.
