- 4 bell peppers
- 1 pound ground turkey
- 4 strips turkey bacon
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, cook the turkey bacon until crispy, then chop into pieces.
- In the same skillet, add ground turkey and cook until browned.
- Add cooked quinoa, tomatoes, garlic powder, onion powder, and chopped turkey bacon to the skillet, stir well.
- Stuff the bell peppers with the turkey mixture and place them in a baking dish.
- Top with shredded cheese.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 25-30 minutes, until peppers are tender.
