Easy Stuffed Pepper Soup

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add onions and garlic, sautéing until softened.
  4. Stir in bell peppers, diced tomatoes, broth, spices, and crumbled turkey bacon.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Serve hot, adding cooked rice and cheese as desired.

Notes

  • For more flavor, allow the soup to sit for a few hours before serving.
  • This soup can be frozen for later use.
