Farmer’s Casserole

A delicious and easy farmer’s casserole made with turkey bacon and chicken ham.

Ingredients

  • 1 pound turkey bacon
  • 1 cup diced chicken ham
  • 4 cups shredded potatoes
  • 1 cup chopped onions
  • 1 cup shredded cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crisp, then chop.
  3. In a mixing bowl, combine the chopped turkey bacon, chicken ham, potatoes, onion, and half of the cheese.
  4. In another bowl, whisk together the eggs, milk, salt, and pepper.
  5. Add the egg mixture to the potato mixture and stir until well combined.
  6. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  7. Bake for 45 minutes or until the casserole is set and the top is golden brown.

Notes

  • For added flavor, you can include bell peppers or spices of your choice.
  • This casserole can be made ahead of time and refrigerated before baking.
